Soak Tamarind in hot water for 30 minutes & extract it's juice & keep aside.Take 3 cups of water & Chop the tomatoes roughly. Add the tamarind extract, turmeric, torn curry & half the coriander leaves. Bring to boil & add the rasam powder, salt & sugar. Mix well & the boil it for few minutes.Switchoff the flame.

Cut the chicken into medium pieces & marinate it with a little chilli powder & salt for a while. Make the first & second extract of coconut milk.Heat Pan, add coconut oil & saute sliced onions, green chilli, ginger, garlic & curry leaves. Then add chilli powder, coriander powder, turmeric powder & chicken masala powder. Put the chicken pieces in the kadai till it is half done. Add the second extract of coconut milk & get it cooked gently in slow fire. Finally add the first extract of coconut milk & serve hot.Garnish it with coriander leaves.

Fish Masala

Mix all the ingredients to marinate. Add little water into it & make it to a paste.Add fish pieces into it & keep it marinated for some time.Heat oil in a pan & splutter fennel seeds,Add sliced onion, curry leaves. Keep the pan covered & stir in between till onion becomes brown in color,Add sliced tomato & sauté till it becomes soft.Add ginger garlic paste, green chilli & sauté for a min or two.Add all masala, salt & sauté for a min or two.Add 1/2 cup of water & allow it to boil.Add roasted fish pieces and gently put the gravy over the fish piecesKeep the pan covered & cook for another 5-6 min in low flame & add oil.
